Leek and Potato Soup

Warm up on a cold winters day by having this leek and potato soup for lunch. Serve with a roll or crackers on the side.
1 Small Onion, Chopped
2 Tablespoon(s) Butter
1 Tablespoon(s) Flour
2 1/2 Cup(s) Vegetable Broth
2 Medium Potatoes, coarsely grated
4 Whole Leeks, sliced thinly, both white and green parts
1/4 Cup(s) Celery, chopped
1/4 To Taste Dry mustard
1 Tablespoon(s) Parsley, chopped
1 1/2 Cup(s) Milk
3/4 Cup(s) Mild cheddar cheese, grated
In a large saucepan, melt butter and cook onion until soft.
Stir in flour, broth, grated potatoes, leeks, celery and dry mustard.
Cover and simmer for 1 hour.
Stir in parsley, milk, cheese and heat until cheese melts. Do not bring to boil.
Add paprika, salt and peppr to taste.
